Oven Omellete

I found this recipe on Lynne’s Kitchen Adventures. She posted it a couple of years ago and somehow I had the privilege of finding it.
I instantly thought this would be something I cooked regularly. It has ingredients I always had on hand. It looks amazing and would be great to take to a breakfast or to take someone for a meal. Can you imagine this instead of a bowl of scrambled eggs?
The directions are so simple.
1. Pull out your bar pan (mine is of course pampered chef) and lay parchment paper over it, making sure to cover the short sides with a couple extra inches. Grease the parchment paper.
2. Whisk together 1 cup milk and ¼ cup cornstarch. Add 10 eggs, 1 TBSP mustard (I skipped this part), 1 teaspoon salt, and teaspoon pepper (oops, skipped this part too); whisk until to combine. Pour into pan, making sure that the parchment lays (or is it lies) down in every corner. Sprinkle meat over top. I used about ¾ cup bacon and ham
3. Bake until edges of omelet are done, 15-18 minutes at 350 degrees. Sprinkle with 1 and ½ cup cheese; bake2 to4 more minutes or until cheese has melted.
4. As soon as you pull it out, pick up one of the short sides of the parchment paper and begin to roll it as tightly as you can.

Breakfast muffins


My friend Becky gave me this reciepe. Take Grands buscuits and put in muffin pan, you will have to take a little from a couple to make 12 since only 10 biscuits come in a pack. scramble (not cook) 5 or 6 eggs, mix with half a pound of meat (we used sausage) pour the eggs and sausage over the biscuit, not quite to the top. sprinkle with cheese and bake for about 18 minutes. WOW they were good and I think they would freeze well. I will tell you I tried a second batch with the generic biscuits, you know the kind that come 4 packs together and put one biscuit in each one. It did not work, the egg was able to get to the bottom so you had to use a fork with it. my goal is things to eat on the way.

Potato Chips


These are so easy, I mean as in really easy!!!
1. Slice 2 potatoes super thin
2. spray a cookie sheet with Pam (haha)
3. spread potatoes out in a single layer
4. Bake at 450 for 8-10 minutes
5. turn after 5 minutes
6. Put sea salt on top of chips
7. Eat

Oh so yummy! My girls said these are the best ever. I really am trying to have less things at my house. If I can buy potatoes and make bake potatoes, mash potatoes, fries and potato chips then that is a ton of little things I do not need (boxed mash potatoes, frozen fries and potato chips).

Neapolitan cupcakes


I think I have found a new favorite cupcake. Have you heard of a Neapolitan cupcake? I learned about them at Hoosier Homemade. They were so easy to make. And it was neat watching people bite into them and discover what they were. I will definitely make them again. I think next time I will serve it with matching ice cream.
1. Mix a chocolate, white and strawberry cake mix in different bowls.


2. Pour some (maybe a tablespoon) of each into each pan.


3. bake according to box directions


Seriously it is that easy, now you can choose your topping. I think she reccomends cool whip which would have been better if I was not going to be outside.

Chocolate Donuts



• 4 cups all-purpose flour (I used 3 cups white and one cup whole wheat)
• 1/2 cup cocoa powder
• 1.5 cups white sugar
• 4 teaspoons baking powder
• 1 teaspoon ground cinnamon
• 2 teaspoon sea salt (I used regular salt)
• 2 cups buttermilk
• 4 eggs, beaten
• 2 teaspoon vanilla extract
• 4 tablespoon melted butter
Pre- heat oven to 450 and bake 8-10 minutes.
I got the recipe (that I doubled and changed a little) from Alli and Son she has some amazing ideas on other toppings. This will definitely be a new favorite one. I have several of these setting on he kitchen table waiting for breakfast.
